Led by our Executive Chef, the same team that oversees Bistro 933, room delivery, catering, and the Gillespie Conference & Special Event Center, we bring creativity, consistency, and genuine hospitality to every meal we serve.

Executive Chef
Carlos Casadio
Carlos Casadio is an accomplished chef and culinary leader whose career reflects a passion for food, hospitality, and creating memorable dining experiences.
Originally from Venezuela, Carlos developed his passion for cooking at an early age. After relocating to the United States in 2000, he changed his college major from Electronics Engineering to Culinary Arts and began building a career in the culinary industry.
A significant chapter in Carlos’s career took him to New Orleans, where he served as an Executive Traveling Chef for major sporting events, including the 2008 BCS Championship Game and Sugar Bowl. He returned to New Orleans for the 2009 NBA All-Star Game at the Superdome, gaining valuable experience in high-profile, high-volume culinary environments.
In 2010, Carlos became Executive Chef at the Gillespie Conference Center, Hilton Garden Inn, and Bistro 933, where he developed a reputation for creative cuisine, customized menus, and strong culinary leadership. Today, he leads the culinary team at Bistro 933.
Beyond the kitchen, Carlos is passionate about mentoring culinary professionals, supporting his community, and sharing his love of food. His leadership philosophy centers on teamwork, continuous improvement, and food that brings people together.

Andrew Schreiber
Assistant General Manager of Hilton Garden Inn
Andrew is a South Bend local born and raised in the hospitality and food service industries that carries a deep passion for customer service and memorable experiences. With expertise in small business owning/managing at Chicory Café, all the way to running concession for Notre Dame Athletics, Andrew takes pride in the dynamic ways to treat guests to an amazing experience in the hotel, restaurant, and conference center.

Bruce Sokol
General Manager of Bistro 933
Bruce brings more than 20 years of leadership experience spanning restaurant operations, customer service, sales, and team development. His hospitality roots run deep, including five years as General Manager of Papa Vino’s, and 7 years as GM at Chili’s. Throughout his career, Bruce has built a reputation for developing strong teams, delivering exceptional service, and creating memorable guest experiences.
